
Here is the receipt of the Mango Salsa... It has a little kick... but people seem to love it...
2 ripe Mangoes
2 fresh habanero peppers
1 red bell pepper, diced
1 small onion, minced
4 tomatillos
1/4 cup Honey
2 Tablespoons vinegar
1/4 cup "Frank's Red Hot" brand hot sauce
1-1/2 teaspoons salt (or to taste)
3/4 teaspoon ground pepper (or to taste)
Minced cilantro (a big fist full)
Peel and dice the mango's. Place in a large bowl. Mince the habaneros and onion (I first take the seeds out of the peppers to hold back the heat.. And you may want to use rubber gloves with handling the peppers) Clean, dice and add red pepper. Discard papery outer leaves from tomatillos; rinse tomatillos, dice and add to the bowl. Add honey, vinegar, hot sauce, salt and black pepper. Toss well and Chill over night. Serve with Tortilla Chips or as a garnish for grilled fish or pork. .. After put together I sometimes add a tablespoon more of honey.. to cut back on the heat.. and I use my little Cuisinart chopper to dice and mince the ingredients
